A-Ha! Bet You Thought I Forgot...


Dear Moms, 

A-ha! I bet you thought I had a crazy mom moment and forgot to include the cocktail recipes!! NOPE! I DID have a crazy mom moment, but then I just figured I would put this out there in a separate post... I mean, cocktails are easily worthy of having their very own post; they have kept my children alive for YEARS! I kid, I kid...or am I? lol  (I am, by the way- but there have been days that a good cocktail got me through to bedtime! We've all been there, right?!) Sooooo, with that being said, I have done extensive research online on summer cocktails (mainly because school is about to be out and well, YOU know... wink, wink, nudge nudge. I have scoured the web- left and right far and wide, I have found a few AWESOME sites that offer email newsletters, so that's a plus! Anyway, why needlessly blather on...let's get to those recipes!

This one, I got from Food & Wine via Bobby Flay; is SUMMERTIME in A Glass! It's simple, delicious, and really pretty in presentation- it's Watermelon and Tequila! This is a fun blended drink that is light and sweet and really, super great! (Trust me, I know my good drinks!)


Watermelon Tequila Cocktail

INGREDIENTS:
  • 1/4 cup water
  • 1/4 cup granulated sugar
  • 8 cups diced seedless watermelon (1 pound)
  • 1/4 cup fresh lime juice
  • 1 3/4 cups blueberries
  • 3/4 cup lightly packed fresh mint leaves, plus 8 sprigs for garnish
  • 1 1/4 cups silver tequila
  • Ice
HOW TO MAKE THIS RECIPE: In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved, about 1 minute; let the sugar syrup cool.In a blender, puree the watermelon until smooth. Set a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp.In a large pitcher, combine the sugar syrup with the lime juice, blueberries and mint leaves. Using a wooden spoon, lightly muddle the blueberries and mint. Add the watermelon juice and tequila. Refrigerate until chilled, about 2 hours.Pour the cocktail into tall ice-filled glasses. Garnish with the mint sprigs and serve.


When the weather gets really warm, my go to drinks of choice are usually Strawberry Lemonade and or a Mojito if I was going to imbibe...(IF, who am I kidding, IF?!) But, Death & Co. of Manhattan uses this recipe that combines them both and I was in HOG HEAVEN when I tried this Strawberry Lemon Mojito on my own! This is another great cookout cocktail, that is sure to please and like regular lemonade, you can experiment with add ins in place of strawberry (peach, raspberry etc) try them out and let me know how it was in the comments!


INGREDIENTS:
  • 8 lemon wedges
  • 24 mint leaves, plus 4 mint sprigs, for garnish (optional)
  • 4 strawberries, plus 2 halved strawberries, for garnish
  • Ice cubes, plus crushed ice
  • 8 ounces gold or aged rum
  • 3 ounces fresh lemon juice
  • 2 ounces prepared sugarcane syrup or agave nectar
HOW TO MAKE THIS RECIPE: In a cocktail shaker, muddle the lemon wedges with the whole strawberries and mint leaves. Add ice and the rum, lemon juice and sugarcane syrup; shake well. Strain into crushed ice–filled highball glasses. Garnish with the berry halves and mint sprigs.
