Easy, Peasy, Healthy Chicken Nuggets



It's after work - the kids are running amok, your house is a mess, and you have NO IDEA what's for dinner! What mom hasn't been here before? Now what?

Never fear, there's still a chance to salvage the day with a fast and simple, delicious dinner!

WHAT YOU WILL NEED:
2 lbs. Boneless, skinless chicken breast (cut into 1” chunks)
1 16oz. Canister any brand, any flavor bread crumbs
2 lg. Eggs
3 Tbs.water
1 lg. Bowl with lid (for tossing chicken)
1 Tbs. Coarse sea salt
1 Tbs. Ground Black Pepper
2 ½ - 3 c. Corn oil (for deep frying, varies on pan depths)

Begin to heat oil to approx. 350°- 375°F. The oil will cool when you add the chicken. Be sure to keep your oil anywhere between 300°-325°F while frying.

Chunk chicken by cutting breast down the middle (creating 2 pcs.) Then cut each piece across in approx. 1” chunks.

Wash thoroughly, pat with paper towel.

Toss with salt and pepper.

Whisk eggs and water and place chunks in egg wash. Remove from egg wash. Place in the bowl with lid add half of bread crumbs to chunks. Put lid on the bowl, and toss chunks until evenly coated.

Place in oil and fry approx. 3 mins on each side, or until chicken floats. [Internal temp of 165°F w/ meat thermometer]

Serve these yummy “nuggets” with oven baked fries, baked potatoes, couscous, quinoa; the list goes on! Add some steamed veggies or even a simple salad to complete the meal.  Experiment with sides and ways to use your new favorite chicken nugget!
